One of Brazil’s most popular drinks

Ingredients: 1 lime cut in quarters, sugar to taste, jigger (3 tablespoons) of cachaça*, crushed ice, 1 teaspoon gin.

How to prepare:

1. Place lime quarters and sugar in a short glass.

2. Squash with pestle until lime juice is extracted.

3. Add cachaça and ice.

4. Finish with gin, mix and serve.

Yield: 1 serving. Multiply ingredients according to number of servings required.

Hint: Remove the white internal vein of the lime as well as the pips (seeds), in order not to embitter.

 FRUIT '' BATIDAS''

Ingredients: fresh fruit juice, sugar to taste, jigger of cachaça per serving, crushed ice.

Example: Strawberry - Use a pound of strawberries mashed with a fork then placed in a blender with 3/4 teacup of sugar and a teacup of cachaça. Beat with ice. Serve in small glasses (about a dozen servings)

Other juices, such as pineapple, passion fruit peach, cashew, lime, grapefruit, etc., are also good "batida" mixers, as well as coconut milk.

Hint: If you want a creamy style "batida", use condensed, sweetened milk to replace sugar, or just add canned cream to taste.

*Cachaça is a popular rum-like liquor made in Brazil. See http://www.webtender.com for more recipes of this kind.
